Thai Slaw

1/2 head green cabbage, shredded
1/2 head purple cabbage, shredded
4 scallions, chopped
1 cucumber, peeled, seeded, and sliced
1/2 c. chopped fresh mint
1/2 c. chopped fresh cilantro
3 tbl rice vinegar
2 tbl soy sauce
1 tsp. Splenda
1/4 tsp. salt
1/4 tsp. pepper
1 ripe mango, peeled, pitted, and sliced

Mix vinegar, soy sauce, Splenda, salt and pepper in a large bowl. Add the vegetables, herbs and mango and toss well.
