Cauliflower & Broccoli Casserole

1/2 head cauliflower, cut into florets
6 oz broccoli, cut into florets
1/2 c. reduced-fat cream of chicken soup
1 c. light sour cream
1 c. shredded reduced-fat cheddar cheese
1/2 tsp. onion powder
salt and pepper to taste

Preheat oven to 350F.

Put vegetables in a large bowl with 1 tbl water. Cover with plastic wrap and microwave on high for 4 minutes. Drain.

Spray a baking dish with cooking spray.

Combine vegetables with soup, sour cream, cheese and seasonings. Pour into prepared baking dish. Bake 20 minutes or until bubbly.

6-8 servings
