Lima Bean Salad

1 15-oz can lima beans, drained and rinsed
1 plum tomato, chopped
2 tbl olive oil
1 tbl red wine vinegar
1 tsp SF maple syrup
1/2 tsp salt
1/2 tsp pepper
1/2 tsp dry mustard

Whisk oil, vinegar, syrup, salt, pepper and mustard together in a small bowl. Toss with the beans and tomato. Refrigerate until ready to serve.
