DRESSING - Whisk together in a small bowl:
1/2 tsp grated orange rind
1/3 c. orange juice
1 tbl Splenda
1 tbl canola oil
1 tsp rice vinegar
1 tsp sesame oil
1 tsp soy sauce
1/2 tsp toasted sesame seeds
1 red bell pepper, seeded and diced
1 green bell pepper, seeded and diced
1 cup shredded carrots
2 tomatoes, seeded and diced
1 tbl minced red onion
1 cup broccoli florets, raw or cooked
Toss veggies with dressing. Refrigerate until ready to serve.
3-4 servings
