Grilled Zucchini with Feta & Mint

4 medium zucchini (about 2-1/2 lb)
olive oil cooking spray.
2 scallions, chopped
3/4 c. crumbled reduced-fat feta cheese
2 tbl chopped fresh mint
2 tbl lemon juice
2 tbl olive oil
1 tsp salt
1/2 tsp pepper

Preheat grill or broiler.

Trim the zucchini. Cut in half crosswise, then lengthwise into 1/4" thick slices. Spray both sides with olive oil cooking spray. Grill or broil 2-3 min. per side or until tender.

Toss the grilled zucchini with the rest of the ingredients.
