Orange Couscous

1 cup orange juice
1 cup chicken or vegetable broth (or water)
1 teaspoon ground cumin
1 10-oz package plain couscous
2 tablespoons canola oil
1 tablespoon soy sauce
1/2 cup chopped fresh cilantro
4 scallions, chopped
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/4 c. slivered almonds, toasted

In a large saucepan, bring orange juice, water and cumin to a boil. Stir in the couscous, remove from the heat. Cover and let stand 5 minutes or until all the liquid is absorbed. Fluff the couscous with a fork. Add the rest of the ingredients, stir gently to combine.
